Cast iron is both inexpensive and highly versatile. It is the work horse of the kitchen! Whether you inherited one  from your Grandmother, bought one that is just sitting in your kitchen, or have been thinking about purchasing some, this class is for you! Unlike other pots or pans, cast iron requires a certain amount of skill and experience to use properly. And, it also requires special handling and cleaning to keep your cast iron seasoned and well maintained for years to come. Working with our Chefs through both hands-on cooking and demonstrations, you will learn the ins and outs of cast iron cooking and care and leave with the confidence to cook with cast iron* at home! Utilizing cast iron, seasonal dishes such as Chicken & Dumplings or Jambalaya, and a fruit crisp for dessert. This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class! Bring along a bottle of your favorite wine or six pack of your favorite beer, ready to prepare and enjoy some cast iron prepared food!

One of the most essential tools every Chef or home cook needs is a good knife. Are you utilizing your knives to their full potential? With the aid and instruction of our Chefs, the Knife Skills Workshop will teach these skills and how put them to practice kicking your cooking up a notch. 

Through hands-on learning with our Chefs, our Knife Skills Workshop you will teach you the necessary knife skills to prepare a variety of recipes. During this class you will be learning proper technique to cut and peel a variety of fruits and vegetables as well as how to butcher chicken in order to prepare dishes including Tuscan Soup and Bruschetta. This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class! In short, you will learn the skills for prepping and cooking meat. You will be learning a variety of skills from making homemade sauces and marinades (which students will bottle and take home with them) to proper brining techniques and the actual methods for cooking assorted meats perfectly! Students will also learn to make homemade Cornbread and Marinated Kale Salad!  This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class! Dishes include poached eggs with Hollandaise sauce for Eggs Benedict, deviled eggs and how to make the perfect frittata. All these amazing egg dishes and maybe a few surprises. Chicken is one of the most popular meats of modern times. We'll guide you through choosing a bird to breaking down a whole chicken to cooking the different parts in new and fun ways.  Breaking down a whole chicken saves money and once knowing how it only takes a few minutes. Once we have broken our lovely bird down we'll cook the different parts in some delicious ways. Italian style stuffed chicken breast is a take on the french cordon bleu and 40 clove garlic chicken, a braised chicken with 40 cloves of garlic. We'll also learn how to take those extra parts and make chicken stock.  This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class!*

Frying anything makes it delicious...or so the saying goes!. And, in our frying class you'll learn the tricks of the trade to fry foods properly. From finding the correct depth and temperature of the oil, to how long you need to fry your food to ensure it's cooked to the proper temperature and consistency, we've got it covered. In our Frying class you will be working with one of our Chef's, who through both hands-on and demonstration, will teach you to Deep Fry safely, while practicing all of these skills. You will also have the opportunity to have any of your food frying questions answered. Recipes  prepared will include Fried Chicken, French Fries and Tempura Vegetables, as well as accompanying sauces. This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class! Almost everybody loves cheese! Knowing your cheeses is a very important aspect of cooking. In our Cheese Basics class we will begin with an introduction to the world of cheese through Chef discussion centering on types, specific varieties and cheesemaking processes. From there we will begin cooking with cheese by making Queso Fresco and/or Mozzarella. Then it's onto homemade Mac & Cheese; beginning with making a basic cheese sauce and noodles, and then building your own Mac & Cheese in a small cast iron pan with your choice of ingredients. Finally, we will making warm and comforting tomato soup and its perfect accompaniment, grilled cheese sandwiches...learning proper griddling techniques to make crisp on the outside, gooey in the middle deliciousness.

Fermentation is a technique for preparing food and beverages that dates back thousands of years. From the brewing of beer to the preservation of food, fermentation is found in all genres of cooking throughout the world. In our Fermentation Basics class we will begin with the Chef's introduction to fermented foods, procedures and history. We will then begin hands-on learning with the Chef walking you through the process prepping ingredients for fermenting foods such as Sauerkraut, Korean Kim Chi and Sweet or Spicy Fermented Peppers. Students will be going home with sample jars of each of the foods prepared.  This class will last approximately 3-hrs...come ready to learn and be ready to sample the foods you prepare at the end of class! Given the nature of this class, having a snack or meal prior to attending is recommended. Feel free to bring along a bottle of your favorite fermented beverage, such as wine or six pack of your favorite beer, ready to learn all about fermentation!*

Recipes include such dishes as Seared Scallops with Lemon Zest and Basil Butter, Grilled Garlic Herb Shrimp Skewers, Mussels in White Wine and Fresh Thyme Sauce, Clams in Lemon Chili Sauce, as well a a tasty side of Shallot Quinoa. For many people, the idea of cooking fish is a daunting task.  Fish are healthy, nutritious and delicious!  And, there are nearly as many ways to prepare and cook them as there are types of fish in the sea!  In our Fish Cooking Basics Workshop our Chefs will walk you through the steps for cooking perfect fish at home. You will learn a variety of recipes and techniques to help you feel comfortable adding more fish to your diet and expand your cooking repertoire. In this introduction to cooking with fish, you will learn to prepare such recipes as White fish and sweet peppers skewers, Pan seared salmon in garlic sauce, papillote "catch of the day" with lemon butter and thyme and delicious Yellow Rice, which make a great accompaniment to any fish dish! This class will last approximately 3-hrs...come ready to learn and be ready to enjoy the food you prepare at the end of class!
